This is honey is mostly from black locust tree blossoms, and wild black raspberry with an assortment of spring flowers such as dandelion,redbud, dead nettle, honeysuckle, wild rose and others. The bees build their numbers through the April showers to take full advantage of the May flowers. Spring honey is much lighter in color and taste than our summer honey. It goes great on biscuits, pancakes, and pretty much anything.
